If you use your rewards card enough, they will begin to send free night coupons in the mail and email. If you don't have a rewards card and you're looking to go somewhere ASAP try booking through one of the discount online sites like:

You should also check the hotel websites. They usually offer internet specials that will include the room, 2 for 1 breakfast, and/or 2 for 1 spa.

Get a Hilton Reward Credit Card and use it. You earn points for free nights. Plus, with your first purchase you get a huge amount of bonus points. Just don't let your balance roll over each month because the rate is really high.
AAA is the best way to go. My finacee and i went to mexico last year and it was the best vacay, way cheap.
If you don't mind staying off-strip or at a not premium strip hotel, go to lasvegasadvisor.com. If you join (it's a reasonable yearly fee) you get their coupon book that not only has discounts on rooms but also on buffets, meals, shows and other attractions and free play at some casinos. The coupons are well worth the money you pay for the book. Happy late anniversary!
